well i couldnt see the vid but thought id help out a bit. have u replaced the thermostat? water pump working ok? heater core good? have u checked the coolant temperature sensor and the wire to it? the fan relay sensor? is your fan turning on at all? have you had the coolant flushed? if the exhaust smells sweet or tangy it could be a head gasket leak. are you constantly adding or losing coolant? try these or reply and go from there.

that temp rose fast!-could be an electrical problem
causing a false gauge reading...Are the radiator hoses
really hot?is the air blowing back from the fan hot?
I have had blown head gaskets before(imports)
and there was no overheating-did have shorted plugs
and steam from exhaust though.
If you are actually overheating almost has to be a
coolant circulation problem.
What happens when you turn the heater on full blast?
-does the temp reading go down?do you get good heat?

hoses arent hot at all, nor is the radiator cap. but then again, im not moving at all. fan was on A/c so im not sure if heater will cool it down but ill check tomorrow.

the radiator and thermostat were replaced today. not sure how to find out if the waterpump is okay. fan turns and works fine. fan motor has also been replaced recently. exhaust smells funky, but then again i have no muffler and its always smelled kinda odd

hoses not heating up indicates no circulation-usually if
the water pump pulley is turning the pump is working
but there might be something odd going on..
Also if you do not have proper flow through the heater
core/"bypass",engine might get a bit hot before
thermostat opens but usually it will open before you
get to the temps seen in your video.
Could run it with the thermostat removed and see if you
have circulation-if no circulation you have a (very rare)
bad water pump or a major blockage somewhere.

If the hoses arent hot i would say its a bad sensor false reading if the temp was what was in video then even without circulation anything connected to that hot of engine would inreturn be hot like the hoses could always get a raytec gun and shoot the temp of block
