oil over heating??

oil over heating??
so I noticed my oil temp rising and falling and sometimes even droping dangerously close to 0. so i changed my oil in the 2.8 v6 thinking this would help. i changed it to 10w-30 and it hasnt made any problems yet besides it seems the oil temp runs a lot hotter now (in between 40 and 80) sometimes getting close to 80 and when i let off the throttle it goes down a bit but as soon as i accelerate a little hard it goes up and comes back down as i let off the gas. then at idle it seems to fluxuate a little. any ideas??

That gauge isn't oil temperature, it's your oil pressure. If it was a temp gauge, it'd have a bigger scale.
If your oil pressure was hitting 0, then you had a problem.
It should move a little at idle, and should be higher when you're going down the road. Sounds like it's working fine to me.
Can you hear any tapping or knocking?

thats a big load off my shoulders thank you and no I do not hear any tapping or knocking the only thing that happens is the power seems to surge at times like when im just turning the wheel but i think thats my battery or alternator
