This heating issue is killing me, HELP

Been having this heating issue where the heat has been acting crazy and I confirmed it with an IR temp gun. It seems to heat up Under throttle... but not "RED" heat... I can drive it all day and night and it wont go to red just act crazy. I thought I fixed it with a new EGR valve because last week I got code 32, replaced the EGR and after that the temp stayed at 180-195 FOR A WEEK. this issue has been going on for well over a month now and it is my daily driver. what would make the temp hotter under throttle and sloooollly go back down with the needle sometimes jumping down and back up??

My Cooling system works fine.
The NEW
-New Stat
-Fan switch
-Fan motor (blows toward the engine)
-Radiator
-Waterpump
-Temp gauge sensor
-New radiator cap
What I Checked
Good coolant flow (upper/lower)
Pressure seems solid in the hoses
Lower hose not collapsing
Stat housing temp rises when gauge reading rises

Update, brought it to a friends shop, he looked at it and did a combustion gasses check with his little blue fluid and plastic tubes... no combustion gasses detected but there were tinny tinny little bubbles that come out he said those were from the combustion chamber BUT I always remember having little tinny bubbles from the coolant sometimes the 3 years I owned the car and they never gave me anyproblems I thought they were just normal?? I MEAN TINY!..like pin needle tip tiny

I have the same problem with an old factory 305 in my 92 Z vert. I got a bigger rad, taurus fan, 170 stat, new cap, good front air dam and baffle. Now it won't hardly hit 200. If I ever get the new engine in it will be extremely cooled. I have tried extra fans and every trick there is but my current set-up is what I will use on all of my vehicles from now on except I will put the pusher fan back on which helped attatched to the front of the condensor.

Wow, im suprised your not spitting ice cubes out your tail pipes. Im not really sure if it is a headgasket problem or not, but I think im just going to pop my valve covers and try torqing down my heads to OEM spec or a couple pounds over. If it is that small of a leak re-torqin SHOULD fix it.

*UPDATE* I was driving th car for MAYBE 5 min when the gauge started to rise and rise.. I had my IR temp gun in the carI pulled over and grabbed it. Popped the hood and grabed the hoses... they felt Very pressurized and had flow, the T stat was open, the in dash gauge was in RED but the hoses and engine were still just warm to the touch, I shot the hoses and thermostat housing, hoses read about 145* and housing read about 160-175*, my block read about 185* I need help I already put a new temp gauge sensor in it. what else could the problem be???
