How will my motor act without the right chip?

I have a dyno/custom chip appointment scheduled with Ed Wright @ Fastchip on the 21st of October. In the mean time, my motor has to be broken in. I'm in a situation that hopefully some of you may already have a feel for! The motor is a 355 10.7:1, afr 195s, stealth ram, supercomp longtubes, 224/224 110 560/560. If there's anything else you need to know, just ask! My car came stock with an L98 and I want to break her in on a stock chip. I have a set of SVO 30#ers and a set of 19#ers. I know the stock injector pulse width is too long to use the 30#s. At the same time, the 19#s wont flow enough. What should I do and how should I expect this motor to run without the proper tuning? Do you recommend a minimum throttle % and a minimum rpm to keep the motor within during breakin? (of course I wont be abusing the thing during breakin) Thanks!

Well, I bore my motor over, re-cammed, flowed the heads, valve job, yada yada yada. 4 tenths of a second SLOWER with a motor that is dyno'd at over 400 flywheel. Need a chip change. Just needs tuned that can only come from a chip.
