tuning probs

I have been trying get my car tuned right, for many months now. It's an 87 V6 firebird engine and wiring in an 85 body with and 83 interior ( I had some spare time).

Symptoms;

on first start of the day it will not stay idling. It will rev up to 2k then go down to 400 over and over again until it stalls. (I have anew remote start I really want to install)

If I hold the gas to 3k for 5 min, it will idle at 900 rpm in park and 700 in drive. when setting the IAC i couldn't get the car to stay running below 550 rpm.

The car shakes, and the exaust rattles badly and feels like it's surging very slightly (not misfiring). It not so bad now that I put the timing to 16*. But you still get a back message while driving

some days it'll spin the tire for 20 feet, some days it'll barely chirp.

After I clear the ecm it burns up alot of gas (while its re-learning my driving)

exhaust smells very rich, and water leaks out the tailpipes, with alot of white exaust smoke (no colant issues)

set no codes. I assume the computer works right because it sets codes when i diconnect the maf or est.

When i diconnect the maf and start it it revs straight to 1700rpm and drops to 950rpm and idles smooth.

My 454 truck gets better gas milage.

What I've done;

It ran (almost) perfectly before it spun a rod with a bad maf. engine was rebuilt .20 over, more agressive cam.

Replaced Maf, mat, ignition module,.... ahh what did I not replace; O2 sensors, IAC, CTS, injectors (tested okay).

Reset the rockers twice. compression is 159-162, no change after pumping oil down the spark plug holes.

Vacuum pulls 16in

I don't want to throw any more money on this problem unless it's gonna fix it.

What I want to do;

turn my laptop into a scanner cause I have way more time than cash right now.

I've been tring to find out how to make a cable out of stuff i already have (a have alot of resisters, caps, pots and such). Is there a diagram out there kickin around?

This question has been asked many times but in my searches I have yet to find a straight answer. I don't plan to reprogram any thing I just wanna see whats happening when it's surging and stalling.

Thanks
