If the guy isn't going to scan your car before he burns you a chip, he's just going to be guessing. You can do that. You'll probably be paying him almost as much as it would cost to get most of equipment you would need to do it yourself. 200$ dollars will get you burnin chips and learning alot about your car. I suggest you read Traxion's chip burning intro, it explaines alot. If you have a laptop you can either build or buy a cable and use either winaldl (easier to use) or Moates' software(much much faster) to scan your car and see what it needs for yourself. Like I said if this guy doesn't hook up to your car and see what it's doing now he's just guessing at what to change in the chip. He will have no idea what your car really needs.
If you decide to get the chip done by this guy, let him know what temp you want your fans on, if you want the torque converter lockup characteristics changed, and if you have vats you can disable it. You have changes alot so a little timing and getting your fuel curves right will take some time. When I say getting your fuel curves right I mean scanning your car while you driveing it to see what it needs. There is no way to guess at that. This will take more than one chip. No questions asked, you can't get it on the first time.

Yeah, tell him to take a hike!
Your setup isnt that much farther away from stock. You should just buy the prom burning stuff yourself and be done with it. Not only that but you can always change things in the future if your not satisfied with them.
