95 Caprice LT1 running rich. VEmaster to the rescue?

I've got a swap where I've used a 1995 Caprice LT1 engine. It's running rich. Does anyone have any suggestions? I am looking at using VEMaster to analyze some data logs from some driving and hopefully adjust my VE tables so that the car will run more like it should. I know that I'll have to unplug my MAF so that the car relies on tables. Catalytic converter is new.

Has anyone done this before for this reason, and have an opinion on how well it worked? Any other ideas or suggestions?
