What books do people suggest for tuning? I have a couple, but non seem to go into specific parameters at all. Does anyone know of a listing of parameters that explains what each one does and how to effectively change it?

For the EBL see the calibration help document. It can be accessed via the EBL Flash Program Group. That and the other two doc's will open in your default browser.

As far as engine tuning, back in the day there were several books, large format paperback books. These were the ones that gave me an understanding of the part AFR and spark advance played. Lets see what I have on the shelf...

Holley Carburetors, HP Books
Chevrolet Power Book, GM
Basic Engine Hot Rodding, Petersen
The Chevrolet Racing Engine, Bill Jenkins
How to Hotrod Small Block Chevys, HP Books

These also provided additional information on cam profiles, heads, valve train, crankshafts, rod prep and so on. There are others that go into suspension, brakes and chassis, along with driving.

Thanks for your recomendations. I am currently reading SA Design's Engine Management- Advanced Tuning by Greg Banish. I have also read "How to Tune and Modify Engine Management Systems" by Jeff Hartman, but I did not find this bood to be very helpful in regards to the actual tuning. It was helpful though to learn about all the sensors and how they work.
