Programing for bin switching

I have an idea on how to tune the VE, spark tables, etc for maximum performance and drivability. Then there is the "Economy" and "Valet" mode. How will we know how "lean" to program the bin for this mode? Running too lean is definitely not a good thing which can damage engine parts. Any input?

my valet bin:

- has the speed limiter set to 40 (there should never be a reason for a valet to go faster than that, and even 40 is generous).

- has the rev limiter set to 3000 (again, generous, but safe).

my wife bin:

- has the speed limiter set to 70
- has the rev limiter set to 3200
- has some minor driveability tweaks specific to her (she's on/off the throttle alot - DFCO is changed a bit, etc)

my economy bin:

- has lighter spark tables, less fuel, etc, in places where it isn't needed, etc. Basic, harmless stuff.

I also have a few empty slots in the layout so that I can set it to these when parking in "unsafe" areas (Seattle is #1 for car thefts in the country). That would throw off even the best car thief. Of course, VATS is enabled always (since I have it, I use it).
