Knock Counts

Just in the last two days have I got the whole aldl data logging bit working so today I'm reading through the data.

I've been studying the Knock count column and over my last trip, about 13 mins mixed driving, I had a total of 21 knocks. Is this acceptable?

Also, just to confirm that my O2 sensor is working right, the data shows that once it's in closed loop, the reading are all over the place all the way from .004 to .911 - does this indicate that it's working or not working?

Depending on the ecm the reported knock counts might increase from forced knock. This is normal and is a way for the OBD I to check the knock detection system. If those counts keep going up then you're either getting false knock or you're really on the verge of detonation. Do a couple WOT runs when the engine is warm and see if those counts increase. If they do then it's probably real knock so try a higher octane gas and/or lower your base timing by a degree or two.
As for the o2 sensor swinging, that's completely normal. The ecm goes rich and then lean, back and forth to keep the CAT happy.
