Electric fans and AC?

Electric fans and AC?
Here's the deal. While driving my Z, when the temp got up to lets say 160, 1 of my fans would turn on. After it got to about 180, the 2nd fan would turn on. Now these figures are just estimates.
Now, about 3 weeks ago I removed the AC compressor and all the other components. This included disconnecting all of the sensors for the AC. After the removal, I was driving and noticed that the car was running at 210. Took a look under the hood and only one fan is running. When it got to 220, only 1 fan was running. At this point I shut off the car.
My question is, what do I need to do to get the 2nd fan to come on like it normally did? I will check to verify that the fan motor is not bad but after that, what? I don't want to hack up my wiring to get it to work if I don't need to. If anybody has had this problem before or has any advice please respond. Thanks in advance!

When you took out your A/C stuff, you took out the other fan, basically because it is switched on by the pressure switch in the A/C system. I don't know for sure if it will come on as a secondary fan at a predetermined temp, but I do know that it would come on whenever your A/C or defrost is on. Probably the only way you're going to get it to even work now is by wiring it some way in tandem with the primary fan, or by direct wiring...

You could install an aftermarket fan control switch (Pep Boys sells them) for the secondary fan.
