Aftermarket wiring harnesses??

Car: 2001 Camaro SS
Engine: Almighty LS1
Transmission: T56
Aftermarket wiring harnesses??
Ok ... I want to basically rewire my entire dash and engine bay...
I have no idea what the hell half of this crap is, I assume 90% of it is for the computer which I currently lack and do not plan to get again.
Is there an aftermarket harness that I can get that is just for gauges (non-electric speedo), fuse block, windshield wipers, turn signals, etc that I need on the dash ...
If so, do they come with the 2 plugs for the back of a stock gauge cluster or do i have to hack into the new wiring to add those??
My stereo when I get to it, along with linelock and everything else will be run off of something else later... (that'll be awhile)
I want something that'll be pretty simple to work with and install, I can't afford aftermarket gauges nor do I really want them right now...
What exactly would be included in an aftermarket wiring harness?
Also, for under the hood, how much of that crap do I need and how much of that crap can I get rid of?? I'm going to start going through it tomorrow and taking things I don't need out

Makes sense to me cause Im doing this now I hope I can help you a bit.Okay first off you will be up ****s creek whitout a Helms book.This is a comprehensive GM manual for your paticular year,each book covers one year.I paid $40 for mine used,it was basically brand new.I can't say enough how much this has helped me.Visit my webpage in my sig,I completly removed all the wiring from the engine bay,and rewired my new Electromotive computer with the help of this book.It shows what each wire is in the whole car,wiring diagrams for anything and everything.My car is an 89,I know what each wire is in each plug on either side of the dash,you know what the white printed circuit plugs into.It shows this in the Helms book.This is your best bet,let me know I can refer you to where I bought mine.

well I'm not going to be wiring in a new computer... but I'm interested in knowing more about the books...
does it tell wire for wire what can be removed and what can't be depending on what you're doing?

Its just one big book for your paticular year.Yes every single wire is either colored or numbered to correspond to your car.It shows every single wiring diagram for every component in your car.
