I don't think you have too much work ahead of you really.
I have been in a similar situation, pulling a MPI 2.8 V6 out and dropping in a carbed V8. You only really need to keep the heavy red wire for the HEI (probably exactly the same), any guage wires that went to senders on the old 4 cyl, the starter & alternator wires... That's about all that I can remember. Keep the tach lead if you have one.
The rest of the wiring going to the computer is in it's own harness to some extent, so it will be somewhat separate.
If you find the wiring that you definitely need to have, like the ones I mentioned, and any more that you or other members may think of - the rest you can remove but I would wait until the car is running!

I agree it looks worse than it really is.Get a service manual I used Haines and I bought a factory manual also.I also did the v6 to v8 swap.take a look at your present wiring.See what you need to eliminate.I ditched the computer harness, sensor wiring, etc.I kept the wires for the starter, and the distributor wire [ 12 volt source with key on].I kept the alternator wiring but I am using a one wire altnernator.Im using mechanical guages for temp, oil, bat.and a after market tach. This was for a 84 Camaro running a carb.
