monitoring from laptop?

i was just talking with my dad about something.....is there a way to hook a laptop computer up to the car (dunno about with a stock TPI or whatever engine, i'm swapping an LT1 into my 'maro when funds allow) to monitor and record things like fule consumption, temps, etc.? sorry i have to refer to this, but its the only thing i can think of thats an example...like in the fast and the furious....the guy in the green eclipse has a laptop durring the race that like has info about the engine or whatever....something like that.....know what i mean? any info on that?

You can, you need a laptop with a serial port, an aldl cable (40 - $90) and somtimes a 10k ohm resistor. It wouldn't be a great idea to drive with it hooked up all the time because it makes the car idle at 1k rpms.
