Do sensors work off voltage or ohms?

Do sensors work off voltage or ohms?
Before I put the 383 in, Im puttin in all the supportin mods. Main thing Im concentrating on now is the gauges. I want to run full electronic gauges, only mechanical I wont mind wud be FP, but thats gonna be under the hood anyways. But, since Im runnin carb, computer's out. So, I was wonderin if anyone knew if the major sensors (oil press and temp mainly) worked off of resistence, or if they have a 5v reference. If they work off resistence, in theory I could have all electrical gauges right?
Factory gauges do not use the computer, just wire them up and you're done.
Most aftermarket gauges come with their own sensors, and just need a 12 volt supply.
The sensors work by varying the resistance in the sensor.
