I want to unplug the engine wiring harness. This is the harness that goes through the firewall by the brake booster. how do I do that without breaking anything. (87 Trans Am)

That would be the 'bulkhead' connector.

There is a 7(ish)mm bolt, in between the two harness plugs, holding together. Remove it (the 7mm bolt) and you can unplug it (the bulkhead connector).
