Wire Gauge size for Temp Switch
I was rewiring my dash and was wondering what gauge wire to use for the Temperature Switch to Temp. Gauge I know the wire is Green but i'm still kinda rusty on picking the gauge size out.

its not a demanding circuit so i would use like 14gauge or as small as 18

Yup, 18 gauge should be perfectly fine.
Btw, what do you mean by "temp switch to temp gauge"? Did you mean "sensor"? Just making sure you're not trying to wire a switch to a gauge, that would not help you much.

in the Factory Manual for my 87 Camaro it clearly calls it a Temp Switch, and on the 3rd gens they had 2 different ones Temp Switch to Temp Light, and Temp Switch to Temp gauge.

The Temp Switch is in the passenger side head, between the last two spark plugs. It is a hi-temp switch for the secondary cooling fan relay. Uses black or grey wire (depends on which year).
The Temp Sender is in the driver side head between the front two spark plugs. It is a resistance sending unit that operates the gauge in the dash. Uses dark green wire.
There is another Temp Sender in the front of the intake manifold, below the TB. It's for the ECM. Uses two wires, black and yellow.
The factory manual might be either wrong or talking about a different switch. You never know. Even the factory manuals are not perfect, I've seen a few mistakes in them.
But anyway, whether it's a sender or switch, you can use 18ga wire with no problems.
