Can I wire a aftermarket mechanical temp gauge on stock manifold?

Can I wire a aftermarket mechanical temp gauge on stock manifold?

So I got a 84 z28 with a LG4 Carbed engine and I wanted to know if it was possible to wire an aftermarket mechanical temp gauge and mount the probe somewhere on the manifold? Is there something I could replace it and insert the probe into??

Also what is the sensor that's on my thermostat housing, could I remove that and stick my probe into it? and if not what exactly does that sensor do and how do I know if its working because I don't think it functions on my car...

I don't know if you'll be able to find a place to put it in the intake, but you can certainly stick it in one of the heads. Each one has two plugged holes on the side that go into the water jacket.
