There aren't many choices. The 3.1 your car came with, a down-grade to an earlier 2.8, or a 3.4.
I'd pick the 3.4 if I were you. GM makes a crate engine, which may be more than you want to spend, but it's a good engine with warranty. Or, one from a 4th gen f-body. You'll have to change a few things from your current engine, like oil pan, I think. But, the boys on the V6 forum will have details (try a search for 3.4 on that forum).

Would a 3.8 fit? They came in later 4thgen Camaros and Firebirds, and they had something like 200hp or something.

Doing a 4th gen 3.8 swap would be about as much trouble and expense as doing a V8 swap.

actually, it's aout the same as when I picked up the 3.4 to swap in. That engine cost me $210, but I also had a 12 hr roadtrip there & back to save $$$$ on shipping. Local enignes were $550 (typical going price for a used 3.4) As for others costs, they go w/any engine swap, even when I did a 400~400 swap in my 77 T/A,
