One or Two flow 40's?

I've got a 1991 z28 w/ a 350 , mild cam, 1 3/4 SLP headders and a 3" exhaust system. It has twin 2 1/2" cat's. The 3" muffler on there now has no packing left (the inside of it looks like the company put 2 glass packs into a flowmaster shell).
My question is if I should go with one or two flow 40's? My bro put on one on his Z and it sounds sweet (so I was thinking I probably need two ) If I do go with two, should I go with two 2.5" or two 3" flow 40's? Also I was thinking about getting rid of the Cats, cause I wount have to go through DEQ for at least 3 years. Any thoughts?

Getting two mufflers to fit anywhere on a 3rd gen is a challenge (and typically ground clearance challenging).

One 3" should fill the bill.
