Hi Guys,
I'm finally getting back to my 89 Formula 383. I took a laser temp gun and pointed it at each (ceramic coated) header tube and noticed some had a large temperature difference. Obviously, they will never be exactly the same but one showed around 300* while another was closer to 500*. Is this normal? Or does this indicate a fuel or valve issue?
Any input would be appreciated.

Could be any of that.
Could also be just a difference in coating thickness, or in air flow over them.
Might want to check at various places along their length.
300° seems kinda low though.

I have a home-made engine test stand. On it is my rebuilt 334 SBC. I did the same test as you and got the same result. My point being is that you probably DO NOT have any problem at all. Don't create one out of nothing.
