Dual 3" cats
I've decided on a set of SLP 1 3/4" headers, and a Flowmaster American Thunder Catback with 3" intermediate pipe.
My question: Is it beneficial to have dual 3" cats as opposed to dual 2 1/4" high flow cats?

Considering the SLP header flange is only 2.2" and the pipe to the cats is 2 1/4" you will not gain with the 3" cats. Just use a good 2 1/4" high flow cat (Random Technology) into a good 3" mandrel bent catback of your choice.

Yeah, I found out the size of the pipes to the cats the day after I posted. Any recommendation on where I can get the best price on a pair of direct-fit decent flow cats?

Call Random Technology 770-554-4242. If you want emission compliance and performance this is the cat. They aren't cheap about $190.00 each for dual cat cars. I paid $560.00 installed.
