Is there a vendor selling new console carpet? I can't seem to find any.

Buy "bulk" carpet, and cut to fit! Most vendors sell "bulk" carpet so you can do your subwoofer box, side panels, center console to match.

I'm in the Netherlands, no one here sells similar carpet and to buy a whole bunch of carpet and eat insane shipping fees is kind of rediculous. I gues I'll have to buy a used console and have the seller remove the carpet....

You don't have to buy "a whole bunch of carpet". Just buy enough to cover what you want. 1 or 2 yards (I guess in your case, meters)

That was classic, carpet which you seek can be bought in small rolls (enough to redo the console) I have even seen it at parts stores.
