on my 83, will any of the later 3rd gen stuff fit like the doorpanels and console from either firebird or camaro?

I believe it should swap, if not directly then with minor modification....

You can swap door panels but Camaro and Firebird consoles are not interchangable. Basically, outside of dash and console parts, everything else is interchangable.

how much different is the console? just where it meets the dash?

Well, the 85-up Firebird consoles are completely different from Camaro consoles. The 82-84 Firebird consoles look similar to the Camaro consoles but are quite a bit a bit different and have no interchangable parts. The area where they meet the dash is completely different.
