Rear gear ratio with a T56

I've got a 92 V6. Right now I'm trying to fix it's many bugs, but the eventual goal is to have a SBC/T56 combo with around 330 to 350 HP. What I want from this car is a fun, tire burning daily driver. I want to be able to drive back and forth to work and put it on the interstate for 2 or 3 hour trips, but still have enough get-up-and-go to catch a tire in second and maybe 3rd. Hopefully very low 14s or high 13s with as good gas mileage as I can. Hopefully mid 20MPG. I was told that with the 6 speed T56 that I can go as low as 410 gears in the rear and still have good interstate MPGs. That sounds really low gearing to me to get mid 20s. I'm worried though that if I go 373s or 355s that it might not have enough low end grunt. Anybody done this swap? What was your rear gear and what's your MPGs?

Just realized I put this thread in the wrong place. Don't know how to move it.
