What would you do to your suspension(short of an IRS)?

Depends on what you want to do with the car. Using Steve Spohn's parts is a great improvement over stock parts.
I'm currently working on getting a 9" rear end for my car. Although I have all the trick parts already suspension wise, I'll probably be ripping it all out and installing ladder bars.

87 IROC-Z Pro ET Bracket Race Car
383 stroker (carbed) with double hump cast iron heads and pump gas
461 Big Block installed and ready for the 2001 racing season
Best results before the 383 blew up
Best ET on a time slip: 11.857 altitude corrected to 11.163
Best MPH on a time slip: 117.87 altitude corrected to 126.10
Altitude corrected rear wheel HP based on power to weight ratio: 476.5
Best 60 foot: 1.662
Racing at 3500 feet elevation but most race days it's over 5000 feet density altitude!

the quick, easy, and off the shelf of it is:
1: the steve spohn rear rig with all rod ends, creates a nice smooth range of motion.
2: eibach pro kit springs, lowers the car about 1.5inches and are stiffer than the stockers
3: a good triangulating strut tower brace, something that connects the towers and the firewall.
4: and bilstein heavy duty shocks, yes plain old off the shelf ones.
5: some sort of subframe connector, depending on iof you hafta sweat class rules or not you may want to look into this, the alston tubular chromoly ones work great and are scca street modified legal.
6: then look for some nice big tires, our cars can handle 17x9's with 275/40 17's. i suggest kuhmo victoracers as my tire of choice
i know that this combo works really well, i used it to great success all last season. i could even keep up with an awd mitsubishi eclipse with twice as much hp as me. the car will turn in like a monster on this set up, learn to counter steer!!!
hope this helps.

Do you think having 17*11's would take care of some of the oversteer?

I would do the following:
Torque arm
Subframe connectors
STB - 3 point
Rear control arms
Panhard rod
Kenny Brown lower brace
Front adjustable coil-overs
Rear weight jacks
ZR1 rubber (275/315R17)
For the curious out there, I have everything but the torque arm and KB brace and it doesn't oversteer at all, unless I nail it around a sharp turn (the car is about 390hp), even then it "floats" more than slides. The car even has 16" rubber, although they are Michelin Pilots, and 17" rubber would help even more. I would also like to mention that the car is very light on the ends: fiberglass hood and hatch, no a/c, aluminum heads, no spare and jack... Still streetable, just hope I don't get a flat-no spare fits over the big Baer brakes. I guess run-flats would fix that problem.
One thing I will say about a fully modified Camaro suspension: it will not feel as tight as a BMW or Audi (or other slow, overpriced euro sleds), but it will give them such an a$$ whooping its not even funny. Then again, nobody who buys a car like those would even have a clue about anything fast anyway.
Ch-Ching! I'll take the Camaro with the 1.05g handling instead of the Beemer and get back $30,000 change please.

The ignorant person gets something today and hopes to have enough money to pay for it tomorrow.
