my temp is all over the place, and a potential overheating issues again

a few weeks ago i replaced my coolant and thermostat due to the rusty water that substituted the old coolant. the engine ran fine for a week or so; the temp never went over 180* (i have a 160* fan switch and a 180* thermostat). then a change occurred; one day i was at 240 the the next at 180, this has been going on for some time now and temp it drastically rises when going up hill.

*side note*
i have replaced most of the houses and what appears to be a some sort of valve that is connected to 3 hoses.

Had a similar issue once, turned out to be the radiator cap.

 

can also be the weather . its getting hotter than usual .
my tpi always ran at 160 when summer was near it ran close to the 200s

my ac on the ls1 is wierd cause sometimes it would feel really cold sometimes a bit less cold. idk
