Sizing tires?

I'm looking at some 18x9.5" wheels and tried doing a search on good tires sizing for that dimension of wheel but didn't find anything. What would be a good size combo for these that would fit squarely over the wheel and provide a large patch? What kind of sidewall height am I looking at to keep it close to stock overall height?

Axle/Gears: 3.73 posi with spacer
A good size tire for that would be 275/40. Its a little taller then stock. This is the size i am going to get in the rear if i ever get rim and tires. For the front i and going to do 245/45/17's

You're going to stagger sizes? 17's on the front and 18's on the rear? I've heard 275/40 when using 17's is an optimal size but does the same hold true for a 9.5x18 wheel?

Stock size on a Z06 Vette (similar size wheel) is 295/35-18.
