Would it be too difficult to mate the WS6 suspension package with rear discs to a 1991 V6 camaro RS?

Well, the rear will fit and so will all of the suspension pieces. The problem is that the wheels will be sticking out 2" farther.

What year is the WS6 stuff from? If its from a forth gen the rear will make the wheels stick 2" out but if it from a third gen then theres no problem.

All suspension piecies will fit then. With the exception of the front springs. Since your car is a V6 the springs are different for a V8. You should be able to bolt everything in. Just make sure you get the correct proportionating valve for 4 wheel disc brakes. It just bolts in place of the old one. I did a similar swap on my 92 RS. I swaped in a GTA disc rear from a 91.
