whatever somebody will pay for it.

depends on the quality of the install and the shape\completeness of the roller.

That's just about word for word what my answer was also going to be.

Is it an 8 point cage or an 8 point roll bar? Does it have a halo bar and A-pillar bars? If so then it's a cage. If not then it's just a 6 point roll bar with driveshaft tunnel braces for 2 more points.

Buying someone else's uncompleted project might be a good deal but can also be more headaches than it's worth. Typically a roller is worth far less than a turnkey car and a roller is never worth what's been put into it.

Re: 85 z-28 chasis with 8pt Cage

My first cage was a Jegs. Although it fit fine, it isn't as nice a fit as an S&W cage.

Cost of a cage is nothing. Cost to install is expensive. To have someone install your cage, estimate $100-$150 per point. Prices will vary depending on how much needs to be done.
