The stock LO3(305TBI)motor has a computer controlled fan, or at least a sensor on the side of the block. now if you were to take the one main lead off the fan, get the positive wire and hook it up to your fuse panel in the IGN box. Then run the other wire to a ground. The fan will run all the time when the car is running.

That is what you want to do, right??

Also, if you wanted to hook it up to a toggle switch, just run the positive wire to the toggle and ground both the toggle and the negative wire on the fan.

What I would do if I was you....

I would get a dual fan setup off of a TPI car. The two fans will cool down that HOT 350 setup. I did this to my 350 which probably doesn't run near as hot as yours. It helped out alot. I just got my chip burned so that the one fan comes on at 180 and the other at 190. I never see 210 or above temps that way.

I run a neat setup that lets me kill my fans when I race, Just put a toggle in your relay signal ground (or positve) wire, this will let you disable the fans at will. (I think thats what RSCamaroGuy92 mentioned).
