Will 160 degree thermostat be a good choice??

Will 160 degree thermostat be a good choice??

I have an '89 Formula. When I bought the car it seemed to run preaty cool, and I LIKED THAT. I noticed the Housing gasket was leakin' one day so I went up to autozone and I figured that whille I was changing The gasket, I might as well change the thermostat. I believe I put a 180 degree in it... my buddy swears it was 195 degree, and now my Bird runs quite a bit hotter. I was thinkin' about gettin' a JET 160 degree thermostat since I do not drive the car in the winter.
Im worried the my car may not enter CLOSED LOOP when I want it too or soon enough, say at the track.
Will I be alright with the 160 or should I get a JET 180 degree thermostat?

Will work fine but lukewarm heat if any.A180 will be the best.
