Closed Loop, EGR, Thermostat Temp?

Can you run a little cooler thermostat without hurting a 93 350 GMC pickup from going into close loop? They come with a 195 and thought maybe I could run a 180 or is that not something I should do? Asking because after going through problems with fuel pump and fuel pump sending unit, I get a good start, good voltage to pump and all things seem great. I get a slight back fire now and then when I put my foot in it, but I get no codes. We wondered if it was going into close loop or not and if there was a way to tell? EGR was blocked when 3704 Edelbrock manifold was installed, but again, we get no codes at all! Any ideas or suggestions welcomed.

180 will be fine if you want a little cooler operating temp.

Put in a 180 in my 91 Pickup, works fine but I do get a slightly higher idle when it runs at thermostat temp.

180 is fine. I would start with the basics since you did an intake swap. I assume you set the timing correctly?

I have about 8 degrees advance using Proform Distributor as recommended by Comp Cam 8-10 degrees. 10, well motor wanted to start to surge a little, but it's ok at 8 and seems to want to run strong.
