My cousin just did a cam swap on his '91 305 TBI Firebird. It now runs like crap, doesn't want to stay running while stopped in gear. Theres a couple of rockers/lifters that arn't adjusted properly and ticking. Would this ticking be picked up by the knock sensor causing the computer to make improper air/fuel/timing adjustments?

I would say to adjust the rockers first......make sure that they are correct then go back and make sure the timing and wires are correct. Yes the knock sensor would pick that up and throw the timing way out. Take the negative post off the batt. and then drive check for codes.
