The harness on the driver side = leave it alone. Driver side harness is used to power the rest of the car, headlights, ignition power to the coil, etc!!
From one of the photos it looks like you have extracted old CCC harness in one piece - that's exactly what you want!!!

Yeah, it took some gentle lovin' but she came for me. Do I need to delete out some of the leftover wires? can I just clip them can cap em'? Or is there some other mundane way of doing this that I'll have to go through?

Make sure that you have ignition coil power lead - pink 10AWG wire identified as well as tachometer. Locate FP relay - look for gray and red wire (this should have been part of your old harness).
AC, stuff can wait. everything else can stay as is for now.

Oups - typo on my part - Carbed cars still used mechanical FP. Your donor harness should have a FP socket (BOSCH style). If this is not the case you'll have to do some basic wiring. It is easy do - you'll need socket, relay and correct size wires.
You'll have to drop gas tank and install in tank FP. When you drop gas tank take a look at gas tank wire harness and number of fuel lines connected to the fuel sending unit. If you see gray or light tan wire (10AWG size) thats the FP power lead. In '86 both FI & Carb were offered in camaro.

So did they typically use the same tank for both apps? meaning there'd be provisions for the pump?

There are two different part numbers called out for Carbed and EFI gas tanks. I am guessing that GM did not put baffles in carburetor specific gas tank. Spectra Industries lists GM27A1982-1987 Camaro(4BBL) and GM27B for FI applications. Fuel pickup is a very specific item for EFI should have four fuel ports, Wires: 3; Sender unit (0-95 Ohms); Notes: SENDER; INCLUDES FUEL SENDER, FLOAT AND STRAINER (FUEL PUMP NOT INCLUDED); w/ Harness Codes: FPH, FEG, FES Part #: GAS-FG20A

Okay, what does a bosch style socket look like exactly? I was wondering, do those tach and batt wires from the old coil setup need to be adapted to the new ones? and many other little things... I put the car up on ramps today so I could finish setting up the tranny wiring and bolting her up, but I realized that I need to lift the motor up a few inches again so I can route the wires to the back of the tranny better. I decided to start hooking up the power steering hoses, so yeah.. that's done now...what shall I do next?

There are couple of styles of BOSCH relays out there - Square and oval, with later being newer style
