Valve lash adjustment....
1/2 a turn or 3/4 of a turn? What happens if you over turn them? Also is it a good i dea to get poly-locks?

Yes.

They will be too tight, and will hold the valves open.

Not particularly, if you have stock rockers and the nuts still have some "lock" friction left.
