cylinder head assembly

If i ordered a new set of "bare" s/r torquers and bought a new set of valves and springs of my choice could i just lap the valves in and go, or do they need to be sent to the machine shop.

I assume the castings come with a nice valve job and the new valves should be ready to go...right?

Thanks

New heads? New valves? I'd second that vote for a hand lapping, then a thorough wash.
