is the swap as easy as unscrewing the old one and putting in a new one, or is there more involved, like draining the coolant system

When you remove the old sensor, coolant will drain. You can change the sensor with minimal amount of coolant loos if you're quick. Have the new sensor ready, with sealant already applied to the threads. Make sure the engine is stone cold and the radiator cap is still in place. removing the cap will vent the system and allow it to drain even faster.

Loosen the old sensor, and when you can turn it with your fingers, get ready with the new one. Unscrew the old one and be ready to screw the other one in quickly. You won't need to tighten it with blinding speed, just get it in the hole and started straight.

Then again, if your cooling system hasn't been flushed in a couple of years, you might as well flush and drain it first.
