Need Help Engine Overheating

I just finished my car tonight. I have a 87 Trans Am 5.0F TPI. I pulled the heads and sent them to a machine shop, I also put a new cam and lifters in. Now it together and I was letting in run and it's overheating the temp gauge hit 250 before I turned it off. Could I have done something wrong. I checked the head gaskets befor I put them on to make sure no holes were block and I did not notice any. Could it be a bad thermostat? I just put a new one in about 3 months ago so I did not replace it. When I shut the engine off all the coolant ran into the recovery bottle. I was trying to adjust the timing so the timing still off. Any ideas what it could be? Man I'm pissed.
