What is the best way to do this? Do I remove a motor mount and jack up the engine?

depends on what you call easy. unbolt the engine and raise it a few inches then swap the pan for another while laying on your back with oil dripping on you as opposed to pulling the engine out and bolting it to a engine stand and doing it standing up. either way not the best project in the world to under take. if the engine doesn't have to come out your way will work.
