Tired 305

I have an engine that has seen some of its last days. The gaskets at the headers, heads, and valve covers are all leaking. Im planning on pulling the tired engine. It will be my first engine rebuild. It is currently a 305 crossfire. My question is should i try rebuilding the 305 and topping it off with a carb setup, or go with a 350 since the engine is coming out? If i went with a 350 would the stock 700r4 trans bolt up with any problems or is it then a good idea to replace the tranny? OR is it smarter to stick with the 305 and learn to build with that? Im not looking to build a 500 hp monster. Just something that I can take out on weekends and cruise around, and be able to say that I built that.
