how much would fuel economy suffer from the elimination of all the emissions stuff?

If done right, minimal, but why bother? In many cases the emissions stuff helps and rarely hurts performance if you upkeep it. The EGR system is a prime example of this.

Not to metion that tampering with the system is a federal offense.

the only reason i ask is because i might be attempting an engine swap, and i want to knwo if i should hook up all the emissions equipment again

good call on that one... the egr valve lowers combustion temperatures signifigantly....you should connect it all up. as when you have to pass smog it will be a pain in the ***....not to mention the engine was designed and computer was designed to have the systems running....your car will run like crap if its not all together...
