Is a Cylinder Head temp Gauge good to have?

I have a gauge I bought a couple of years ago still in the box. Is it good to know the temp of the heads or does the water temp tell you enough? If its good to use it what is normal and what is Hot?

The temp guage in the dash gets its reading from the sensor mounted in the driver's cylinder head.
