Vacuum leak
Try a propane torch, turned down REAL low, aim it all around every gasket in the whole system. Shouldn't be too hard to tell when a fgasket starts letting in propane.

MAF car? Make sure the tubes under the MAF are connected, also make sure the boot didn't fold under the MAF.
Lastly, are the runner on the correct side? If not, massive vacuum leak...IIRC they will switch side to side, but leak like crazy.

I'm curious how you set your timing so you know it is 10* without the car actually running right. When I replaced my intake manifold gaskets, I couldn't time the car at all because it wasn't running unless I held the throttle open. Guess what it turned out to be... a vacuum leak! The brake booster vacuum line wasn't hooked up. And was causing serious issues. The RPMs were so jumpy because I had to hold the throttle open (and it still wouldn't stay at a constant RPM), that the timing was all over the place, even with the ESC wire disconnected.
Once I saw that massive leak and fixed it, the car ran rock-solid and then I was able to time it perfectly.

Check for vacuum leaks. There is always something to forget to hook back up, or a passage that is left not snugged up...
