I've been going through older posts and haven't been able to find someone that did both sides with the engine in the car.
Has anyone done this? How long? How skilled do you need to be? Should I just have it done? I'm going to order the insert kit from Energy for my header installation.

you can do it with the engine in the car but you do need to raise it in order for the brackets on the engine to clear. You probably want to remove the distributer so you don't smash it on the firewall. Then you know how to go at it from there.
