Right now I have a 160* stat, aluminum Griffin radiator, tranny cooler, and belt driven fan. My car usually runs 170*, except in 100* and in traffic, I don't have a shroud. But I am going to college in the fall and it's in the mountains and stays cold from September thru April. What stat should I get to make sure I have heat but won't cause overheating problems on warmer days.

Any one of those stats should be fine. Keep in mind that the thermostat only controls minimum temperatures, not maximum. Once it's open there is absolutely no difference between a 190* stat and a 160* stat as far as cooling system performance is concerned on hot days.
