Might be that the choke adjustment is a little off. It should be on the top of the fast idle cam when its cold, thats pretty easy to check when the car is cold, just open the throttle and see if its in the right spot or not. If you have to adjust it, make sure its off the choke when the engine is warm as well.

Take off your air cleaner and look on the driver side of the carburetor. There will be a lever type thing that your gas pedal line connects too. If you still can't spot it, have some one press the gas pedal and you will see it move. There should be a screw I believe on the top part of it.

The rough running right after start up could be a bad choke pull-off. It's that vacuum thing right on the side towards the front of the carberator. The choke is suppose to close fully when cold, then as soon as the engine starts the vacuum pod pulls the choke open slightly. This allows air to get through the carb. Start your car and see if the arm on the pull off pulls back inside it. If not check the vacuum line or replace the pull-off. The fast idle part is probably just adjusment.
