I have a remanufactored 305 short block with dish cast pistons. It's bored to the max .060 over. ( I was surprised to find this out when I removed the heads) I have 58cc HP heads. They are basically 305 torquers that I got from this place that did extra porting to them among other things. It also has a 214/224 cam. Not thinking, I got a .043 head gasket. The Car Craft article with the 325 horse 305 used a .015 gasket with their dished pistons.
Would it be worth it to do all the work to install the .015's? If it would boost the compression and shave a .10th or 2 off my 1/4 mile I might do it.

No. It would be a big mistake. I doubt you'd add even 2 HP by making that change, and you'd add a reliability issue.
Stick with the regular FelPro blue gaskets. Your car will go faster with a thick gasket that works, than it will with a thin one that's blown.
