How do you remove valves from the head?
I wanted to disassemble the head, and pocket port them. I got the springs off, and started to rmove one exhaust valve. i noticed there was some friction after the tip of the valve got into the seal, so I stopped, and pulled the valve back up. There was a bit of bronze fillings from where it dug in a bit, but some careful cleaning and some oil for lubrication, and I have it sliding up and down like all the others.
How do you remove the valves without chewing the guides all to hell? I can't believe that everytime you remove the valves you have to replace the guides, that would just be retarded.
The heads are Iron pro toplines with bronze guides. Any help would be great.

Could be simple, the seals lock pretty tight on the valve. Remove the seals first, see if the situation improves.
If not...
Take a close look at where the valve locks sit. Valves have a nasty tendency to get damaged in this area, from spring pressure pushing up on the locks over time, and then up on the valve, and then pushing the metal on the top side of the valve lock groove up and out. You may need to carefully file this area so its the same diameter as the rest of the valve so it doesnt damage the guide when removing the valve. I have twice seen, although extremely rare, tops of valve guides damaged from locks that made the top of the guide abnormally small and cause sort of the same issue. It can only get so small though, as the valve stem itself. Add in a possible couple thousandths valve stem wear, slight possible issue. Now that I think about it, bent valves will also do weird things when trying to remove them.

All 8 valves on the head have a sharp edge where the locks grab onto the valve. But nothing that seems like wear. the heads are pretty much new(under 1000miles).
How do you remove the seals?
And, the little bits of bronze filings, I barely brought the valve down till I felt it grab then pulled it back out. Do I know have to replace that guide?

I think you should have someone with some experience do your porting for you, or do some more research before you jump into the job. Chances are that you'll do more harm than good in the process of porting them yourself.

Use some 600 grit sandpaper to clean up around the valve tip and lock area (not the part that slides into the guide).
I see this all the time, it's just a bur that develops from engine running over time.
Your guides are probably fine. Once you sand off the burs the valve will slide out easily.
