Where do I connect my aftermarket mechanical oil pressure guage in my 91 gta?

Right here. That way you don't have to disturb the factory sending unit.

Is the arrow pointing at the front of the block just below the intake left side? Is it a plug? If it is then it must be behind the AC bracket.

Correct. You may have to remove the sensor above it for access. It's still easier than on the back of the engine under the distributor.
